COOKING WITH THE SNAP: Roasted Okra

Roasted Okra

Small to medium size, tender okra pods
Olive oil
Salt to taste

Heat oven to 375-400 degrees F (410 degrees F and higher will cause olive oil to smoke – I heated my oven to 375).

Toss okra in olive oil . (I drizzled a little over mine in roasting pan.) Season with salt.

Heat for 15-20 minutes, turning after 8-10 minutes.
