Getting your Trinity Audio player ready...

Editor’s Note: As the SNAP turns 140 this year, let’s celebrate the past with some of our favorite recipes of our grandparents, parents, aunts and uncles. Email bj.drye@ with recipes and a small story about the famous cooks that go with the recipe. Pictures can be included of the cook.

Roasted Okra

Small to medium size, tender okra pods
Olive oil
Salt to taste

Heat oven to 375-400 degrees F (410 degrees F and higher will cause olive oil to smoke – I heated my oven to 375).

Toss okra in olive oil . (I drizzled a little over mine in roasting pan.) Season with salt.

Heat for 15-20 minutes, turning after 8-10 minutes.
